Sold as whole birds here at the farm, they are individually hand processed and packaged on-site. My birds are raised in small batches twice a year. I could raise more, but the meat quality and special attention they require would be lacking, this way, they are raised and processed compassionately.

Muscovy Duck $4.50 per pound
Raised Free & Humanely without grow-lights, antibiotics or pesticides and harvested at 12 weeks to ensure consistency in weight and tenderness. Hens average 3 1/2 to 5 lb. and drakes average 7 to 9 lb. High in meat-to-bone ratio, with less weight loss after cooking than Pekin ducks. Low in fat with a wonderful veal-like texture and flavor. Excellent when roasted whole, this one is best served rare to medium rare. See recipes here
At 98% or greater fat free, Muscovy meat is one of the healthiest on the market today. It's lean and not at all greasy, as is the case with commercial duck. Many say the breast meat of a Muscovy is hard to tell from a Sirloin steak; others compare the meat flavor to an expensive ham, I believe the breast has the texture of veal. Either way, it is as unique as it is tasty and nutritious.

Humanely raised on pasture without grow-lights, antibiotics or pesticides and harvested at 12 weeks to ensure consistency in weight and tenderness. Hens average 3 1/2 to 4 1/2 lb. and cockerels average 4 1/2 to 6 lb. These birds are young, tender, and very meaty. Excellent for roasting, grilling, or frying.

Cayuga Duck $3.50 per pound
Raised Free & Humanely without grow-lights, antibiotics or pesticides. Hens average 2 1/2 to 3 lb. and drakes average 3 to 3 1/2 . This duck is a lean & flavorful, medium-sized roaster. As a heritage breed, the breast is small but extremely flavorful. The thigh possesses a succulent, deep red meat with a complex beefy flavor. See recipes here
